KETO BANOFFEE ICE CREAM

310 mls thickened cream
1/4 cup almond milk (or coconut milk)
1 tsp vanilla essence
3.5 tbs sweetener of your choice (I used Natvia)
1 tsp coconut oil
VitalZing Banana MilkDrops
Keto cookies of your choice (I used 3 Viking mamma cookies) 60g unsalted butter
FIRST MAKE THE ICE CREAM
Beat 250mls cream, almond milk, vanilla essence, 1.5 tbs sweetener, coconut oil and VitalZing Banana MilkDrops until soft peaks form. Pour evenly into silicone moulds or into one freezable container
NEXT MAKE THE CARAMEL
Combine 60mls thickened cream, 2 tbs sweetener and 60g butter in a nonstick saucepan over med - low heat until it softly boils (make sure you never stop stirring) Continue stirring the caramel until it becomes a nice toffee colour. Should take around 25-30 mins. Allow caramel to cool down and once cooled divide between the ice cream mixture. With a tooth pick, swirl the caramel around the ice cream but don’t over mix.
Crush your keto friendly biscuits of choice and distribute evenly over the ice cream. You can add as much or as little as you like. Place in the freezer 4 hours or until set.
